Usage: As one of many options, we offer a recipe for slow-cooked lamb roast. Rub the lamb selected for roasting with Hiiu Gourmet lamb roast seasoning salt. Leave in the refrigerator overnight. A few hours before cooking, bring to room temperature. Preheat the oven to 240 degrees. Place the seasoned lamb shank on a deeper baking tray, add a little water. Cook for 10 minutes at maximum heat and then reduce the oven temperature to 140 degrees, cover the shank with a lid or foil and cook for about six hours or longer (depending on the size of the shank). Juniper berry mustard goes well with it, for example.
